Think homemade macaroni and cheese is hard? Think again. This recipe is easy and will put one of the best macaroni and cheese dishes on the table that you’ve ever had in your life. It is a perfect addition to a holiday meal, or even makes a great lunch paired with a salad.
Easy Peasy Mac ‘N Cheesy
- 8 oz macaroni, uncooked
- 1/4 cup butter
- 2 1/2 Tbsp all-purpose flour
- 3 cups milk
- 1 cup Cheddar cheese
- 1 cup Gouda cheese
- 1/2 cup Butterkase, Gruyere, or even goat cheese (you decide its your mac ‘n cheese!)
- 1 tsp salt
- 1 tsp paprika
- 2 Tbsp butter
- 1/2 cup bread crumbs (I blend up bread in the Vitamix)
Directions:
Pre-heat oven to 350 degrees.
Cook macaroni according to package and drain.
In a saucepan over medium heat melt butter and then slowly stir in flour to make roux. Add milk slowly in the mixture stirring constantly. Stir in cheeses and reduce heat to low until all cheese is melted and you have a slightly thick cheese sauce. Stir in salt and paprika.
Put macaroni in a medium casserole dish and pour cheese sauce over macaroni. Place casserole dish in oven. Total bake time will be 30 minutes.
Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. When there is 10 minutes bake time remaining. Open oven, slide dish out, and sprinkle the breadcrumbs over the top. Return to oven and let finish baking. Serve hot.
