A filling breakfast with a Mexican flare, Huevos Rancheros is one of our favorite weekend brunch meals. With eggs fresh from my mom’s farm, lettuces from the garden, and homemade salsa using the Vitamix, we had the makings of a delicious, healthy brunch, here’s the recipe.
Huevos Rancheros, serves 2
2 cups lettuce, chopped (may we recommend bibb, green leafy, spring mix)
2 cups black beans, seasoned with salt and peppered and cooked
1 large tomato, sliced
4 eggs, prepared sunny side up (or medium)
1 avocado, sliced
1/2 cup salsa, Homemade Salsa Recipe Here
8-10 fresh cilantro leave
1 jalapeno, sliced or diced (optional)
Corn or flour tortillas, serve on the side
Lime wedge
Prepare your black beans. Fry your eggs like you like them. (How To Cook The Perfect Egg Here).
Place one cup lettuce on each plate, 1 cup black beans, evenly distribute tomato slices, 2 eggs to each plate, and arrange avocado slices per plate. Divide salsa and drizzle over top of eggs, sprinkle with cilantro and diced jalapeños if desired. Serve with a lime wedge.
