Lobster Linguini Recipe

Chances are the mention of lobster makes your mouth begin to water. Wanting to do a romantic one pot dish that would be great for a dinner party or perfect for a date night in, I thought why not try a lobster linguini. I used the Vitamix to create a light, spicy tomato sauce that paired perfectly with the succulent lobster tails over a bed of al dente linguini.

Lobster Linguini

4 lobster tails, (for a dinner party think 1 lobster tail per guest)

1 Tbsp butter

1 16-oz package linguini, boiled and prepared al dente (not soft)

Spicy Tomato Sauce

3 cups tomatoes, diced

1 cup white wine

1 Tbsp crushed red pepper, add more to taste if you like it spicier

1/2 cup extra virgin olive oil

1 tsp salt

1 tsp black pepper

10 fresh basil leaves, chopped

5 sprigs of thyme, leaves removed

2 cloves garlic, crushed

1/4 cup onion, diced

Bring 6 cups of salted water to a boil. Boil lobster tails for 5-7 minutes or until tails are bright red. Remove from heat and drain half the water, add butter, and let soak while sauce is prepared.

In a Vitamix add all ingredients for spicy tomato sauce. Pulse 4-5 times on low speed then pulse 2-3 times on medium speed until ingredients are pureed. Pour sauce into a large dutch oven over medium heat and bring to a boil then reduce and let simmer for 20 minutes.

Toss linguini with sauce. Crack lobster and serve tails in one piece or cut into 1-inch pieces and toss. Top with fresh basil if desired. Bon appetit!
